Black Bean Soup- Freezer Meals

I mentioned a few weeks ago on that I am in a freezer meals club once a month. I am loving trying new recipes and although I won't remake all of them, we have found a few keepers. I want to pass on the goodness so if one stands out, I'll  be sharing it with you.

Black Bean Soup*

1 pound ground turkey
30 oz black beans
1/2 cup salsa- mild
1 tablespoon chili powder
16 oz. chicken broth
1/2 cup cheddar cheese, shredded
5 tablespoons sour cream
2 1/2 tablespoons cilantro, fresh

Freezer Preparations:
1. Brown turkey and then drain.
2. Bag the meat, salsa, beans, chili powder and broth together. Freeze.
3. Bag separately: sour cream, cilantro, cheese. Refrigerate.

Cooking Day:
1. Heat and serve. Garnish with sour cream, cheese and cilantro.
Best served with tortilla chips or cornbread.

This is my favorite meal so far. We have already made it again and my whole family eats it. It is healthy, delicious, filling and pretty inexpensive to make- not to mention easy!

*I take no credit for this actual recipe. It was given to me at Hy-Vee in our freezer meal class and I am only sharing it as a family favorite- not an original recipe.

  1. looks super yum! quick question, though, how much broth do you use? the recipe doesn't say.

    1. 16 oz. Thanks for the heads up- I just updated the recipe!

  2. Just pinned it! This looks like a family-pleaser at my house too. Thinking I may need to look into a Freezer Meal Club! :)

Thank you so much for taking the time to comment!
