Black Bean Soup*
1 pound ground turkey
30 oz black beans
1/2 cup salsa- mild
1 tablespoon chili powder
16 oz. chicken broth
1/2 cup cheddar cheese, shredded
5 tablespoons sour cream
2 1/2 tablespoons cilantro, fresh
1. Brown turkey and then drain.
2. Bag the meat, salsa, beans, chili powder and broth together. Freeze.
3. Bag separately: sour cream, cilantro, cheese. Refrigerate.
1. Heat and serve. Garnish with sour cream, cheese and cilantro.
Best served with tortilla chips or cornbread.
This is my favorite meal so far. We have already made it again and my whole family eats it. It is healthy, delicious, filling and pretty inexpensive to make- not to mention easy!
